Recipe Sweet Potato Fritters
Add the flour cinnamon fennel and 1 2 teaspoon of salt.
Recipe sweet potato fritters. Use a scant amount of olive oil to coat the base of a large frying pan. Drain squeezing to remove excess liquid. Use a 1 4 cup to scoop out fritter batter carefully form in to a fritter with your hands and place in to the fry pan.
Add to a bowl with the spring onions finely chopped chilli garlic cumin seeds and chopped coriander stalks. Place grated sweet potato grated ginger and egg in a medium to large mixing bowl. In a large bowl whisk the eggs flour baking powder cornstarch seasoned salt and harissa.
Pour boiling water over sweet potatoes in a large bowl. Add the onion garlic sweet potato and parsley if using. Preheat the oven to gas 7 220 c fan 200 c.
In a fry pan on medium heat melt some butter. Put heaped tablespoons of the batter onto the frying pan smoothing. Combine the grated sweet potato flour cornmeal onion egg and sprinkle of salt and pepper and mix well with a fork.
Add the sweet potatoes and onion. Wash peel and grate sweet potato using the coarse section of a grater. Grate ginger using a fine grater or microplane.
Over a sink squeeze the liquid from the grated sweet potato and carrots. Step 1 in a shallow pan heat oil to 350 degrees f. Cut sweet potato in half scoop.
