4 1 4 cups sifted bread flour.

Leave to foam about 10 minutes. Sprinkle the yeast over the water. Stir until yeast dissolves.
Take a new bowl combine hot milk with sugar and salt and butter. Let stand 5 minutes until the yeast softens and begins to form a creamy foam. Cool mixture to 105 to 115 degrees.
Sprinkle yeast over very warm water in large bowl. Mix yeast and 3 3 4 cups of the flour in a large mixing bowl. Add sugar the 1 4 cup butter and salt to hot milk and stir until sugar dissolves and butter is melted.
