Recipe Old Fashioned Egg Noodles
In a small bowl combine the flour and salt.
Recipe old fashioned egg noodles. If using a pasta machine start rolling pasta at a 1 setting roll again at a 2 setting and again at a 3 setting. Mix the eggs and water in a bowl until well beaten. Stir to form a stiff dough.
Make a well in the center. On lightly floured board roll thin then sprinkle a bit more flour on let dry some then from long edge roll up then slice into thickness you like for noodles. When ready to use drop into boiling water or chicken broth or beef broth.
Shake to separate and spread out to dry for several hours. Dry the pasta for 20 minutes before cutting then dry the cut shapes until no longer moist and sticky. In another bowl beat the egg yolks egg water and oil.
Fold the flour into the eggs and knead the dough adding flour until you achieve a soft elastic dough that holds together but doesn t shine until it feels right. Exchange the water for some cream or evaporated milk. Roll out dough pieces using a pasta machine or by hand to desired thickness adding flour to keep them from sticking as needed.
Add a couple 2 tablespoons of the fat from the boiled chicken. Let the dough set for about 10 minutes. Turn dough onto a well floured surface.
Lay pasta sheets out on paper towels and let dry for 2 to 3 hours. Pour the egg mixture into the nest.
