Recipe Quinoa Roasted Vegetables
Cover the pot and reduce heat to low.
Recipe quinoa roasted vegetables. Sprinkle with salt and pepper. Slowly pour in the remaining 2 tablespoons of olive oil while whisking constantly to emulsify the mixture. Toss to coat evenly keeping the vegetables separate on the pan.
Once done drain a mesh strainer and set aside. Roast for 15 20 minutes or until fork tender. Meanwhile in a large saucepan bring broth to a boil.
Bake uncovered at 425 for 35 40 minutes or until tender stirring once. Season generously with salt pepper and maybe another squeeze of lemon to taste. The concept is simple.
Simmer until cooked 12 15 minutes. Place vegetables and garlic in an ungreased 15x10x1 in. Drizzle with 2 tablespoons oil.
Place the quinoa and vegetable or chicken stock in a medium saucepan and bring to a boil over high heat. Transfer the roasted vegetables to a large bowl and add the quinoa. Drizzle over the quinoa and toss together with the roasted vegetables and parsley.
Garnish with crumbled feta if you d like. Stir in the remaining oil lemon juice and zest and season with sugar to taste. Squeeze the roasted garlic cloves out of their skins and mash with some seasoning.
