Leave to simmer for approx 10 mins. Cover and leave to simmer for 25 minutes until all the vegetables are soft try crushing a bit of carrot against the side of the pot with the back of a spoon. Remove 1 3 of all the cooked vegetables and set aside then use an immersion blender to purée the rest in the pot.
Saute for 3 minutes then add garlic celery carrots potatoes and all spices. Put previously removed vegetables back and add mustard pepper nutmeg and vienna sausage slices. Add the sauerkraut and the bay leaf stir and sauté for about 30 seconds.
