Oven Roasted Potatoes Recipe With Thyme

Oven roasted potatoes recipe with thyme. Toss together all ingredients in a bowl. Heat oven to 160c fan 140c gas 3. Season with salt and pepper.
Pour over the melted butter sprinkle over the thyme and some salt preferably sea salt or rock salt and toss until each slice is coated in butter. In a large bowl toss the new potatoes with the oil garlic thyme salt and pepper. Roasted potatoes with thyme.
Cook gently for about 15 mins until softened. Preheat oven to 450 f and place a backing pan on rack in lower third. Spread potatoes on a baking sheet.
Parboil the potatoes for 5 7 minutes drain and place in a roasting tin. Brush the bottom of a 10 oven safe fry pan with 1 tablespoon butter. Stir in potatoes until evenly coated.
Step 3 in a roasting tin measuring about 20 x 20cm assemble the potato slices vertically tightly packed together like a deck of cards until the dish is full and you ve used all the potatoes. Rinse and dry potatoes with a paper towel and transfer to a large bowl. Add olive oil seasoned salt salt and black pepper.
If you re not using fresh sage feel free to add a little extra thyme and rosemary. Sprinkle with thyme salt and chili flakes if using. Preheat the oven to 200 c gas 6.
