Quinoa Potato Soup Recipe
Turn slow cooker on high to preheat.
Quinoa potato soup recipe. It s also vegan no meat or dairy and gluten free. Heat the oil over medium heat in a large saucepan or soup pot. Reduce heat cover pot and simmer soup until quinoa is tender 10 to 15 minutes.
Heat some oil in a large pot and sauté the onion for about 3 minutes. You ll know the quinoa is cooked when the little tail from the seeds has uncurled itself. Cook stirring occasionally until vegetables are soft about 10 minutes.
Cook stirring often until the onion has softened and is turning translucent about 6 to 8 minutes. Peel and cube potato. Peel and chop onion.
Add the vegetables garlic and desired seasoning to the same pot which you have just boiled the quinoa in. Slice leek and rinse well. For an oil free version you can also sauté the onions in water.
Add stock and bring to a boil. Pour the water or stock into a large cooking pot and bring to a boil. Sprinkle with fresh chopped parsley and serve with whole wheat baguette.
Add onion carrot celery and garlic and season with salt and pepper. Add quinoa and return to boil. Transfer to slow cooker.
