Cube velveeta and cream cheese and place in a microwave safe dish along with rotel and spinach.
Recipe for queso spinach dip. Combine the cream cheese and salsa verde in a small pot set over medium heat. Cook until melted stirring occasionally so the cheese does not burn. Stir in the spinach and season to taste with several dashes of cayenne.
In a large pot over medium low heat add cheeses tomatoes milk and garlic powder. Add jalapeno sauce to taste. In a large skillet heat the oil over medium heat.
In a cast iron skillet add the canola oil on medium high heat. Microwave on high for one and a half minutes and then stir well. Whisk in the shredded monterey jack 1 2 cup at a time until fully incorporated.
Add garlic and cook until fragrant about 1 minute. Add the spinach and cook until just wilted then remove from the pan. Season with garlic salt and pepper to taste and mix in the chopped spinach.
Cook and stir onion until translucent about 10 minutes. Combine pepper jack cheese and milk in top of a double boiler over simmering water. Add the cheese and half and half and continue stirring until melted.
Heat olive oil and butter together in a 3 quart saucepan over medium heat. Step 2 stir onions tomatoes spinach and red bell pepper into the cheese mixture. Stir frequently scraping down the sides with a rubber spatula to avoid scorching until cheese is melted and well combined with the milk about 5 minutes.
