In a saucepan bring stock to a boil. Grill onion for 2 minutes turning occasionally then add tomatoes and grill for a further 2 minutes or until onion is lightly charred and tomato skins are starting to burst. Bring to a boil then reduce to a simmer for about 10 15 minutes until water is absorbed.
Toss tomatoes onion and 2 tbsp of the oil in a large bowl. Squeeze lemon juice over quinoa salad season with salt and pepper and toss to coat. In a large bowl combine quinoa tomatoes cucumber kalamata olives red onion and feta cheese.
