Recipe Sweet Potato Enchiladas
Preheat oven to 400 degrees f 204 c and position a rack in the middle of the oven.
Recipe sweet potato enchiladas. Preheat the oven to gas 7 220 c fan 200 c. Tip the sweet potatoes peppers and onions onto a baking tray. Bring a large pot of water to a boil over medium heat and boil the sweet potatoes until tender about 30 minutes.
Drizzle with 1 tbsp oil and 1 tbsp cajun seasoning toss to coat then roast for 20 25 mins until tender and lightly golden. Cool and peel the sweet potatoes. Bake for 20 25 minutes or until sweet potatoes are fork tender and slightly caramelized.
Cook for 30 minutes or until the potato is tender but not mushy. Meanwhile peel and chop into small pieces the sweet potatoes. Place a generous 1 3 cup filling in the center of each tortilla roll up and place.
Heat the oven to 200c fan 180c gas 6. Add the oil and lots of salt and pepper and toss well. Sweet potatoes peppers.
Place the sweet potatoes in a bowl and mash them with the cream cheese green onions chili powder cumin oregano salt and pepper until well mixed. Take the veg out of the oven and leave to cool a little. Put the potatoes onion peppers and spices on a non stick baking tray.
Add cubed sweet potato to one large baking sheet or more as needed and drizzle with oil or water cumin paprika and salt. Meanwhile blitz the tomatoes chilli garlic and 1 tbsp cajun seasoning.
