Recipe Sweet Potato Halloumi
Season with salt and pepper.
Recipe sweet potato halloumi. Preheat the oven to 180c 350f. Add the halloumi and toss until well coated in the minty oil. Rinse the sweet potatoes pat them dry and cut into large wedges.
Toss everything together so that they are coated in the oil. Return to the oven and bake for another 10 minutes. Cook the coated cheese for 4 5 minutes turning once until golden.
Place the warm potatoes halloumi rocket sesame seeds and oregano onto a large platter or individual plates. 1 roast the sweet potato as above. Spread on the prepared baking tray and bake for 10 minutes in the oven.
In a medium size saucepan heat up 1 tablespoon of oil add the onion and fry gently for about 4 minutes until softened stirring often. Rub each potato with a little oil and salt then wrap in a double layer of foil. Pour the oil into a bowl and stir in the mint.
Put the pan back on the heat melt the remaining oil fry the halloumi on high for 1 minute on each side then add the roasted sweet potato halloumi to the plate scatter with the pumpkin seeds fresh herbs the rest of the dressing. Roast in the oven for 25 minutes or until coloured and softened. Remove and set aside.
Place sweet potato olive oil chilli thyme garlic salt and pepper in a medium bowl. Put the wedges on a tray and then drizzle with the honey olive and sesame oil. While the sweet potato is in the oven make the dhal.
