Recipe Sweet Potato Kale Soup
Bring to a boil.
Recipe sweet potato kale soup. Add sweet potato and reduce heat to maintain a simmer. Sauté over medium heat for around 5 minutes until the onion is translucent. Stir in kale and chick peas.
In a large pot or dutch oven heat the olive oil over medium high heat. Stir in the broth beans sweet potatoes and kale. 2 sweet potatoes medium works best 1 cup dry brown or green lentils rinsed 1 cup cherry tomatoes chopped 1 2 yellow onion chopped.
Pour in broth and bring to boil. Add sweet potatoes bay leaf thyme and enough water to cover by 1 inch. Gluten free and vegan too.
I m so excited today because my friend julia from the roasted root wrote an awesome book and i got a chance to read through it try a recipe. Add in the garlic rosemary and thyme then sauté for an additional 1 2 minutes. Stir in the garlic salt and pepper.
Uncover give everything a good stir. Add the kale and push down into the hot soup. Simmer for 5 minutes more.
Once the kale all wilts simmer on low for 15 to 20 minutes or until the kale is tender and tasty. Discard bay leaf and thyme branches and puree the soup with a vertical blender. Add sweet potato to the pot with 1 3 cup of water then cover the pot and let steam for 5 minutes.
