Recipe Sweet Potato Quinoa Salad
A sprig of rosemary or thyme.
Recipe sweet potato quinoa salad. A swizzle of olive oil. 1 14 ounce can chickpeas. In a small bowl whisk together the mustard maple syrup and nutritional yeast if you don t like nutritional yeast just leave it out assemble your salad by topping the greens with the roasted sweet potato quinoa and maple mustard dressing.
Line a sheet pan with baking paper and put sweet potato onto the tray. Stir in quinoa and sweet potatoes. Cooked quinoa for serving optional baby kale for serving optional dressing of choice see notes.
Set aside to cool. Roast in the preheated oven until tender 20 to 25 minutes. 2 large sweet potatoes peeled and diced.
Toss sweet potatoes in olive oil on a baking sheet. Pre heat your oven to 200 degrees c 390 f. Peel and rinse the sweet potato carefully cut it in half lengthways then cut slices into half moon shapes.
In the meantime cook the quinoa according to the package instructions. 2 tablespoons maple syrup. 2 shallots peeled and roughly chopped.
Toss in oil and season with salt and pepper.
