Quesadilla Recipe With Refried Beans
In a small bowl mix beans tomatoes and green onions.
Quesadilla recipe with refried beans. Tip in the beans paprika and a splash of water. Cook on both sides allowing the cheese to melt and the beans to heat up. Using a potato masher break the beans down as they warm through to make a rough purée.
Add the cumin and cook for 1 min more. Once partially melted fold the tortilla in half. It is best to build the quesadilla in the pan in which it is going to be cooked in.
In a small pot warm the refried beans over medium low heat. For each quesadilla heat one side of the tortilla for 10 seconds on a hot frying pan. Add a heaping spoon of refried beans to one half of the quesadilla then add shredded cheese then a few spoonfuls of your meat mixture add more cheese on top close it and add it to the skillet.
Top with remaining tortillas. Divide the spinach over the cheese. Heat the oil in a large frying pan and cook the onion and garlic for 2 mins.
Add garlic and cook stirring for 30 seconds. Fold each tortilla in half to cover filling. Spread half of the tortillas with bean mixture.
Set a cast iron frying pan over medium heat. Saute onions in a large saucepan until soft. In a 12 inch skillet nonstick or cast iron warm the olive oil over medium heat.
