Recipe Pork Roast Oven
Allow the pork roast to sit at room temperature while the oven is warming about 30 minutes.

Stir together some honey dijon mustard garlic soy sauce and olive oil. Place the pork loin roast on the rack and rub all sides of the pork with the cut sides of the pieces of garlic. Place vegetables on bottom of a shallow roasting pan.

Roast for 15 minutes then lower heat to 375 degrees f and continue roasting until the meat thermometer reads 145 degrees f. Preheat oven to 325. Place roast on top of vegetables fat side up.
Heat the oven to 425 degrees f. Add 2 cups water to pan. Insert a meat thermometer probe into the middle of the roast and place the pork in the hot oven.
