Recipe Roast Pork Leg Crackling
Place the roast in a large roasting pan.
Recipe roast pork leg crackling. For ease of carving remove the crackling first it should pull away quite easily then carve the pork into slices and cut up the crackling into chunks. Rub well into the scores as this not only seasons the meat but helps draw out moisture producing crispy crackling. Roast for 30 to 45 minutes until the skin of the pork has started to puff and you can see it turning into.
Place the pork skin side up in a roasting tray and place it in the preheated oven. Reduce temperature to 350 f 180 c and continue roasting for 1 1 1 2 hours depending on how well done you like your roast. Preheat oven to 220 c.
Increase the oven temperature back up to 440 f 230 c. Cook uncovered for 30 minutes then reduce the temperature to 180 c. Transfer pork to a roasting dish and roast for 50 minutes or until the rind crackles.
Season the rind with a generous amount of sea salt about 1 tablespoon. Serve with yorkshire puddings roast potatoes or mashed potatoes plus apple sauce pork gravy and all your favourite roast dinner vegetables. Rub the salt and oil into the rind and place the pork leg roast into a large shallow baking dish.
Pour boiling water over the pork leg roast and pat dry thoroughly with a paper towel.
