Recipe Zucchini Potato Soup
Add enough broth to barely cover the vegetables.
Recipe zucchini potato soup. Cover and simmer for 15 minutes or until vegetables are tender. Are you still loving all of the soups i ve been sharing lately. Add the chopped vegetables then cover them up with cold water.
Peel the potatoes wash the courgettes zucchini and chop them into cubes. In a large saucepan combine the zucchini potatoes onion broth salt and pepper. In a saucepan bring broth to a boil.
Stir in the zucchini and potato. Stir in half and half parsley salt and pepper. Simmer partially covered until potatoes are tender about 15 minutes.
Chop the onion finely and stir fry it in a sauce pan with 2 tbsp of olive oil until translucent. Bring to a boil place a lid on the pot and reduce the heat to low. Add the garlic and briefly fry.
1 hour 30 min. Add stock and simmer 20 minutes or until vegetables are soft. In a small bowl beat eggs.
30 min cook. Chop onion potato zucchini roughly. Stir in zucchini potato and onion.
