Zucchini Noodles Recipe With Chicken Pesto
Keto chicken and pesto with zucchini noodles.
Zucchini noodles recipe with chicken pesto. Bring to a simmer add chicken thighs reduce heat to low and cover. Combine pesto ingredients in a food processor or high powered blender and pulse until mixture is coarsely ground. Add in the spiralized zucchini along with some salt and pepper to taste.
Add a little oil the chicken breasts and sprinkle with salt and pepper. Add zucchini noodles and tomatoes to the dutch oven toss with 3 4 1 cup of pesto sauce. Remove thighs from skillet and cover to keep warm.
Add the noodles in batches to the simmering water and blanch the noodles for just 2 3 minutes. Serve chicken over raw spiralized zucchini spooning sauce over to cover. Be careful not to overcook.
Shred zucchini into noodles and sauté in a pan with olive oil on the stove for just a few minutes. Cook while stirring everything together until the noodles are coated with the pesto and slightly softened about 1 minute. Turn off the heat and add the cherry tomatoes pesto and zucchini ribbons.
Add the remaining 1 tablespoon oil to the pan. Add the drained zucchini noodles and toss gently until hot 2 to 3 minutes. Slice chicken into bite sized cubes and season with salt and pepper.
Top the noodles with the sliced chicken more pesto and shredded parmesan cheese. In the same large skillet over medium heat add remaining tablespoon of oil pesto tomatoes and zucchini noodles. Add the chicken back to the pan with the noodles and toss.
