Quinoa Recipe Kale Mushrooms

Quinoa recipe kale mushrooms. Add kale to pan in batches stirring until wilted. Add mushrooms and garlic. Then add mushrooms kale and garlic and cook for another 3 minutes.
If using frozen quinoa and kale omit the steps of cooking the quinoa and preparing the kale. Once mushrooms are just soft add kale and saute for 1 minute until kale begins to wilt. Sauté for about 5 minutes until mushrooms have released liquid and are browned.
Add vegetable broth and quinoa to the pot and stir to combine all ingredients. Added bonus it tastes even better the next day for lunch. Add 3 cups of kale stir well to combine.
It s a fairly basic recipe but can be dressed up by adding a few extra flavours in there such as sun dried tomatoes a bit of salty tangy and braised fennel a bit of sweet. Toss in the kale and stir fry with the mushrooms for another 2 3 minutes. Add brussels sprouts and cook for 3 minutes.
In a large skillet heat oil and butter over medium heat. Fry for another 5 minutes until the quinoa is fairly dry and slightly crispy. Add coconut milk vegetable stock remaining salt and pepper and a pinch of crushed red pepper.
Stir in remaining 1 4 teaspoon salt. Season with salt red chili flakes and lemon juice. Add 1 cup sliced mushrooms cook until brown about 4 more minutes season w 1 4 tsp each of salt and pepper.
