Add chicken cubes and cook for 1 to 2 minutes or until browned on all sides.

Roast turning once until an instant read thermometer inserted into the thickest part of the chicken reaches 160 degrees f and the lemons are browned 7 to 9 minutes more. Add quinoa stock and bay leaves. Simmer the mixture until the chicken breasts cook through the quinoa has absorbed the broth and the spirals release around the edges.
