Recipe Sweet Potato Ginger Soup
Add the onion and carrots and cook until softened.
Recipe sweet potato ginger soup. Add ginger powder if using to make the soup extra spiced warming. Use a stick blender to whizz the soup until smooth wrap a tea towel around the pan to prevent the soup from splashing while you whizz it. Place all the ingredients except ginger powder in a large soup pot.
Stir in the ginger garlic and chilli flakes and fry for 2 3 minutes or until. Add garlic and saute until garlic begins to brown 2 to 3 minutes. Bring to a boil.
Discard pandan and ginger before serving. Once the sweet potato and apple are cooked carefully add them to the pan. Place pandan leaves ginger dried longan and water into a medium sized pot and bring to a boil.
Simmer for 30 minutes. Simmer for a further 5 minutes then remove from the heat. Reduce heat to low and simmer partially covered until sweet potatoes are tender about 10 minutes.
Reduce heat and simmer until potatoes are soft about 30 minutes. Continue to saute until fragrant 30 seconds to 1 minute longer. Add the ginger coconut milk stock and salt then bring to a gentle simmer.
Bring to a boil then simmer with a small lid vent opening for 15 20 minutes until the sweet potato is just softened but still holding its shape. Do not boil for too long as the sweet potato will become mushy disintegrate easily. Heat a splash of olive oil in a large pan and gently sweat the spring onions garlic and ginger with a pinch of salt until soft without colour about 3 minutes 2 add the sliced sweet potato to the pan and cook for a few minutes then add the coconut milk and water.
