Recipe Sweet Potato Hash Browns
Using a colander rinse the sweet potatoes until the water runs mostly clear.
Recipe sweet potato hash browns. Place the sweet potato in a kitchen towel and squeeze all the excess liquid. Heat 1 tablespoon oil in a large cast iron skillet over medium high heat. Drop potato mixture into 3 1 2 inch rounds.
Heat oil in a large pan add spoonfuls of sweet potato mixture and fry in batches. To keep the patties warm between batches preheat the oven to 200 degrees f. Squeeze the rinsed potatoes to remove excess water and empty them into a medium bowl.
Cook and stir until tender about 15 minutes. Add potatoes and cook stirring occasionally until golden brown about 8 minutes. Heat a large cast iron or similar heavy bottomed skillet over medium high heat.
Cook and stir onion until lightly browned 10 to 12 minutes. Cook the patties turning once and lowering heat to medium if the pan gets too hot until nicely browned on both sides 6 to 8 minutes total. In a large bowl combine sweet potato 1 tablespoon oil salt pepper garlic powder and chipotle chili powder.
Heat olive oil in a large skillet over medium heat. Add the diced onion and garlic along with the eggs flour oil spices and mix together well. Form three 1 2 cup sweet potato patties in the pan flattening them with a spatula.
Add onion flour garlic salt pepper and 1 1 2 tablespoons of olive oil to the sweet potatoes and mix everything well. Step 2 working in batches if necessary use 2 tbsp of butter per batch scoop large spoonfuls of grated sweet potatoes into the pan forming small mounds. Gently press to spread the mounds out a bit.
