Recipe Sweet Potato Kale Quinoa
Transfer the sweet potato to the lined baking sheet be sure not to crowd them.
Recipe sweet potato kale quinoa. Cook for about 5 minutes. Turn the heat up to medium high and add in the diced sweet potatoes and sauté for 2 minutes. Preheat the oven to 400 degrees f.
In a second medium large bowl sweet potatoes with onion garlic cumin 1 tbsp oil salt and pepper until well coated. Roast the sweet potato. Add the stock salt pepper and chile flakes.
Add in the apple cider vinegar salt and pepper. Then add in the garlic sage and quinoa and sauté for 2 minutes more. Add the garlic and cook for 1 minute.
Stir and allow the acid to cook off for 1 minute. Combine kale quinoa and cranberries in a large bowl and toss with dressing. In a large bowl massage kale with oil and a pinch of salt set aside.
Meanwhile combine quinoa and 2 cups of water in a medium saucepan. Wash sweet potatoes and cut into 1 2 inch cubes. Preheat oven to 425f line a baking sheet.
Bring to a boil then reduce heat and simmer covered 15 minutes. Spread the sweet potatoes into a single layer and roast for 15 minutes before stirring and flipping. Roast for another 10 minutes until tender and lightly browned.
