Recipe Sweet Potato With Pineapple
Mix sweet potatoes crushed pineapple light brown sugar and butter in prepared baking dish.
Recipe sweet potato with pineapple. Pour over sweet potatoes. Sprinkle with pecans if desired. Remove skins and dice into bite sized pieces.
Add margarine pineapple juice salt and pumpkin pie spice. In a large bowl combine the crushed pineapple pineapple chunks and sweet potatoes. Sprinkle the spice mixture over the sweet potatoes.
Cool slightly peel and cut into chunks. Bake at 375ºf for 60 to 90 minutes or until yams are tender when pricked with a fork. Spoon baked yams into large mixing bowl.
Layer the sweet potatoes in the prepared casserole. Place yams on foil lined baking sheet. 1 cup packed brown sugar.
In a large bowl mash the sweet potatoes. When cool enough to handle peel and cut into inch slices. Original recipe yields 8 servings.
