Baked rice pudding recipe. Bake covered 45 minutes stirring every 15 minutes. Mix melted butter rice sugar and cinnamon in a pie dish then add milk and mix it through bake it for around 1 hour and 10 minutes until it s golden on top and the rice is cooked through. Cook for 2 hrs or until the pudding wobbles ever so slightly when shaken.

Butter a 850ml baking dish then tip in the rice and sugar and stir through the milk. Place first four ingredients in a large saucepan. This baked rice pudding is so thick and dense you can legit cut a square of it and it holds its shape once it s cold.
Stir in raisins and vanilla. Then slowly add the milk and cream and mix. Combine the milk vanilla bean and seeds sugar and lemon peel pour over the rice and stir to combine.
Step 4 bake uncovered for 30 minutes. Start by beating eggs and sugar together in a bowl. Pour the mixture into a casserole dish that is oven safe and cook it in a water bath.
Bake covered until rice is tender about 15 minutes. Set casserole into a larger ovenproof dish. Top with the knob of butter and sprinkle with nutmeg to taste.
