When pie dough has chilled remove it from fridge and knead lightly a few times. Top with whipped cream and sprinkle with more pumpkin pie spice or cinnamon on top and before serving. Stir in vanilla and pumpkin pie spice.
Remove from oven and let cool on a cooling rack or chill in the fridge for 30 minutes. Add white chocolate chips and mix until just combine about 30 seconds to 1 minute. Batter will be speckled.
