Recipe potato onion soup. In a heavy 4 quart pan melt 1 4 cup butter and onion until wilted. Heat a 6 to 8 quart stockpot add the butter and onion and cook gently. Meanwhile melt the butter or margarine and oil in another saucepan put in the remaining onions cover and cook gently for about 15 minutes or until they are very soft.
