Recipe Quinoa Brussel Sprouts
Combine the shredded brussels cooked quinoa dried cranberries chopped pecans and shallot in a large bowl.
Recipe quinoa brussel sprouts. Remove pan from heat and let set for 3 5 minutes covered. Then cut them in half hot dog style and place on baking sheet. Add the pre cooked quinoa dried cranberries spices half a teaspoon more of salt a touch of pepper and another tablespoon of olive oil.
Spread brussels sprouts over pan drizzle with olive oil and season with salt and pepper. In a large skillet add the olive oil the halved brussels sprouts and any stray leaves the crumbled bacon and the minced onion finely chopped small white onion works too. Scatter the brussels sprouts and onions over the top.
Lower heat cover and continue to cook for 15 minutes or until quinoa is tender and liquid is absorbed. Melt the butter in a medium sized pan over medium heat. Toss through with the sweet potatoes and spread evenly on the tray.
Cut the stems off the brussels sprouts then slice them in half and add them to mixing bowl. Discard any burnt single brussels sprout leaves on the pan then stir the roasted sprouts into the quinoa. Transfer the mixture to an 8 by 8 inch square baking dish and sprinkle evenly with grated parmesan.
Thinly slice a red onion and spread evenly on the baking sheet. Add the garlic and cook just until fragrant stirring often. Toss vegetables once or twice while roasting.
Mix well and roast 10 minutes. Stir in shallots and garlic. Spray a baking sheet with non stick cooking spray and set aside.
