Recipe Sweet Potato Latkes
Squeeze excess moisture from the grated onion and place into the bowl with the sweet potato.
Recipe sweet potato latkes. You can add minced garlic chives or 1 4 cup of any shredded raw vegetable or substitute the cheese with a tablespoon of sugar and serve with maple syrup. Working in batches of 4 spoon 1 8 cup potato mixture per latke into oil and flatten to 3 inch. Cook until crispy and golden about 2 3 minutes per side.
Don t soak these sweet potato latkes just lightly fry on both sides. Heat oil in large heavy skillet to 375 degrees f 190 degrees c. Use a large cookie scoop or cup measuring cup and make 18 latkes dividing them between the 2 baking sheets.
Spoon roughly 1 4 cup of the latke batter onto the prepared baking sheet lightly. Drop sweet potato mixture by teaspoonfuls onto cookie sheet. Place the cooked latkes on a paper towel lined plate to drain any excess oil.
Arrange warm latkes on a serving platter. Alternatively you can eat them with ketchup just like sweet potato french fries. Good use of leftover mashed potatoes.
Heat the oven to 400 degrees f. Fill a bowl with lightly salted water. Heat oil in a deep 12 inch nonstick skillet over moderately high heat until hot but not smoking.
Flip cakes after 2 to 3 minutes when bottom is browned and brown other side. In a large skillet or cast iron pan heat about 1 inch of vegetable oil over medium high heat. Top each latke with about 1 1 2 teaspoons yogurt lime sauce.
