Recipe For Oatmeal Icebox Cookies
Called icebox cookies because they must be kept in the refrigerator overnight.
Recipe for oatmeal icebox cookies. Sugar and softened margarine add. Beat in eggs and vanilla. Cream butter shortening and sugars until light and fluffy.
In a separate bowl mix remaining ingredients. Add dry to the wet and mix well. Back in the day a refrigerator was called a icebox due to the fact that a large chunk of ice needed to be added to keep food cold.
Gradually beat into creamed mixture. May be frozen at this point. Flour soda salt add.
Beat in eggs lemon extract and vanilla extract. Stir in the oatmeal and water until blended. Eggs sift and add.
Blend together dry ingredients and shortening mixture. Add eggs and vanilla. Add oatmeal nuts and chocolate chips to mixture.
Chill dough for several hours in the refrigerator. Divide dough in half. Wrap tightly in waxed paper and chill thoroughly.
