Recipe Quinoa Mediterranean Salad
In a large bowl combine the quinoa roasted tomatoes arugula cucumbers herbs feta olives onion and pine nuts.

Top with the roasted chickpeas and serve. While the quinoa cools dice all the vegetables. To cook the quinoa combine the uncooked quinoa with cup water in a small saucepan.
