However i much prefer to make royal icing with meringue powder or dried egg whites mixed with a stabilizer cream of tartar and sometimes a bit of sweetener.
Using only three ingredients this royal icing recipe is great for decorating cookies gingerbread houses and piping flowers. Gradually add remaining 3 3 4 cups sugar mixing constantly and scraping down the sides. Meringue powder makes gorgeous royal icing without the use of raw eggs so you can keep the icing stored at room temperature.
Test the icing for outline consistency by piping a small amount through a decorative tip. Cover with damp cloth to prevent drying out. This recipe makes 3 cups of icing and uses meringue powder rather than egg whites as the base.
Let icing sit for 15 to 30 minutes to let air bubbles rise naturally. It dries hard with a shiny smear proof finish and is easy to customize with color and flavor. Beat all ingredients together until icing forms peaks about 7 to 10 minutes at low speed with a heavy duty mixer 10 to 12 minutes at high speed with a hand held mixer.
Increase to medium speed and beat until the icing holds thick soft peaks 4 to 6 minutes. Place meringue powder and 3 4 cup water in the bowl of an electric mixer and use the whisk attachment to combine. Add 1 4 cup of the sugar.
