Recipe Sweet Potato Hash
Diced ham steak and a little salt give this recipe its name.
Recipe sweet potato hash. Cover with plastic wrap and microwave at high 15 minutes or until potatoes are tender. Place sweet potatoes in a glass casserole dish and sprinkle them with garlic powder onion powder thyme salt pepper and paprika. Add water and salt.
Cook and stir onion in the hot oil until slightly softened 3 to 4 minutes. Peel and finely slice the onions. Season with salt pepper and paprika.
Tips for crispy sweet potato hash browns. Meanwhile heat 2 tablespoons oil in a large skillet over medium high heat. I find it helps bring out the sweetness from the sweet potatoes and offer a subtle layer of flavor as well.
How to make sweet potato hash first peel and chop 2 3 large sweet potatoes you will need around 6 cups worth of diced sweet potato. On a large rimmed baking sheet toss sweet potatoes with bell peppers onion garlic and oil. Heat olive oil in skillet over medium heat.
Microwave until partially softened 2 to 3 minutes. Heat 1 tablespoon of oil in a large frying pan over a medium heat add the onion and cook for 5 minutes or until starting to soften stirring regularly. Add the red onions bell peppers green onions and garlic and saute until tender and lightly golden 5 to 6 minutes.
Peel the sweet potatoes and maris pipers then chop into 2cm chunks. Scatter rosemary and bacon on top. Parboil in a large pan of boiling salted water for 5 minutes then drain and allow to steam dry.
