Recipe Sweet Potato Kidney Beans
Simmer 10 minutes or until vegetables.
Recipe sweet potato kidney beans. Add sweet potatoes and let pan fry for about 3 5 minutes. Add them to the prep bowl with the sweet potatoes. Add the tinned tomatoes kidney beans and spices and bring to a simmer.
Cook for at least 10 minutes until the tomatoes have thickened and the mixture looks nice and rich. Add the garlic and cook 1 minute. Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas.
Leave this for a further 5 minutes. Remove from heat and stir in the chili powder cumin mustard cayenne pepper and soy sauce. Add sweet potatoes stirring to coat.
In a large pot heat the oil over medium heat. Let mixture cook for about 3 4 minutes on low to medium heat. Cook for another couple of minutes.
Season with salt and with pepper to taste then stir in the passata. Give the seitan or vegan sausage a quick saute then add to the prep bowl. Gradually stir in water and heat until warm.
Season with salt and pepper. Step 2 meanwhile mash the avocado with the lime juice in a small bowl then stir in the chilli tomatoes coriander and onion. Add drained and rinsed red kidney beans ground cumin or ground fennel lemon lime zest and parsley and stir to incorporate.
