Pour 1 4 cup sherry and a pair of cups broth into pan. Place stockpot into the oven uncovered and roast at 350ºf for 60 minutes. Once roasting time has finished transfer meat to a plate to rest.
Put the roast on top of the celery and add 2 cups of the water into the bottom of the roasting pan. Add carrots potatoes onion and celery to slow cooker. Roast inside a 450 oven see notes until deep golden brown 40 to forty five minutes.
