Wobbly bacon is another. Sprinkle with salt and a few grinds of pepper. When it foams add the potatoes and onions and toss them in the butter until well coated.
Add water but don t quite cover the vegetables. Skip the saute steps and simply add the veggies potatoes seasonings and broth to the slow cooker. Blend and add the remaining ingredients.
Add potatoes and enough water to cover. Chop remaining potatoes in 1 4 inch cubes adding each potato to the pot once it s chopped stirring and covering. Add to potato mixture.
Cover and cook until potatoes are tender 15 to 20 minutes. Drain all but 3 tablespoons bacon fat from the pan. While peeling potatoes is not hard it is a task i very much dislike so i chose to use red potatoes in my recipe.
