Recipe Pork Leg Roast Boneless
Bake for 50 minutes 25 minutes per lb.
Recipe pork leg roast boneless. Score the pork leg with a sharp knife in a zig zag pattern. Sprinkle with the salt and rub it into the skin. Preheat oven to 220 c.
Boneless leg joint loin roast shoulder or pork rack cook for for 30 minutes then reduce to 180c gas 4 fan 160c for the remaining time. Bash the coriander seeds peppercorns and 2 teaspoons of sea salt until fine in a pestle and mortar. Trim 2cm from the ends of the skin then roll up again.
Remove the string and open up the pork. Sprinkle the top of the roast with sage rosemary garlic and salt and pepper. Roast for 15 minutes then lower heat to 375 degrees f and continue roasting until the meat thermometer reads 145 degrees f.
Bake for 20 minutes then reduce heat to 180 c and bake for 40 minutes. Preheat the oven to 220Âșc gas mark 7. Insert a meat thermometer probe into the middle of the roast and place the pork in the hot oven.
Heat the oven to 425 degrees f. Preheat the oven to full whack. Allow the pork roast to sit at room temperature while the oven is warming about 30 minutes.
Immediately before cooking dry the pork rind thoroughly with kitchen paper then brush or rub with the oil. Unwrap the pork cover loosely with kitchen paper or foil and leave in the fridge for at least 4 hours or for up to 24 hours. Secure with kitchen string.
