Do not allow to boil.
Recipe potato soup with bacon and cheese. Bring to a boil stirring constantly. Stir in cheese heating just until melted do not boil. Remove bacon pieces and set aside leaving the fat in the pot.
Chop bacon and add to soup. Add garlic and cook until fragrant about 30 seconds. Add butter and chopped onion and cook over medium heat until onions are tender 3 5 minutes.

Serve in bowls topped with crumbled bacon shredded cheddar and chopped chives. This is optional and mainly affects the potatoes but also assists to thicken the soup allow to sit for 15 20 minutes while cooking bacon. To cooked potato and broth mixture add water cream and roux stirring continuously until mixture thickens.
Place bacon pieces in a large dutch oven or soup pot over medium heat and cook until bacon is crisp and browned. Cook over low heat until the cheese is melted stir continuously and remove from heat when cheese is melted. Add potatoes chicken broth carrots onion parsley celery seed salt and pepper.
