Recipe Sweet Potato Frittata
While the sweet potatoes are baking thinly slice the onion and add it to a frying pan with 2 teaspoons of olive oil.
Recipe sweet potato frittata. Add onion and cook stirring for 5 8 minutes or until soft. In a large mixing bowl whisk the eggs until blended. Sauté stirring often until both the onion and sweet potato are lightly browned and the onion is softened about 7 minutes.
Preheat the oven to 425 degrees fahrenheit. Add cooking oil and then onions to heated oil. Press down the sausage and sweet potatoes into the eggs so that the mixture is completely covered.
Add the sweet potatoes and lightly season with sea salt and black pepper. Place sweet potatoes into a microwave safe dish or bowl. Saute until softened 3 minutes.
In a 10 inch oven safe sauté pan or well seasoned cast iron skillet warm the olive oil over medium heat. Bake the frittata at 350 degrees for 25 30 minutes until egg is golden brown and puffed. This recipe can also be prepared from start to finish in a large well seasoned cast iron skillet.
Cover with wet paper towel and microwave on high for 2 minutes. Pour the whisked egg mixture evenly over the sausage and sweet potatoes in the cast iron. Rinse sweet potato and place in a shallow microwave safe dish no more than two layers deep.
