Recipe Quinoa Green Beans
Add 1 tablespoon salt and beans cooking until bright green about 4 minutes.
Recipe quinoa green beans. Drain in colander and set aside. Cut them on the bias diagonally into 2 to 3 inch long pieces. Bring a large pot of water to a boil.
Allow them to cool slightly. Add green beans and cook for about 3 minutes so they are crisp and not fully cooked. Drain and add to the quinoa.
Place the colander in the ice water to preserve the beans bright green colour and stop them from cooking further. Onion and garlic and cook 3 4 minutes until softened. Add tomatoes and let cook until they let the juices out 3 4 minutes add the green beans if fresh then quinoa and cook for 5 minutes.
Put quinoa in a medium pot and add water or broth. Bring to a boil cover and simmer for 15 to 17 minutes until the water is absorbed. Add chickpeas and cook for 5 min until quinoa becomes fluffier.
Cover bring to boil then lower heat and cook until beans and quinoa are soft stirring occasionally about 20 minutes. In a large skillet with a lid sauté onion with 1 tbsp olive oil add spices mint cumin paprika. While quinoa is cooking bring a large pot of salted water to boil over high heat.
While the quinoa is cooking steam the green pieces until just tender about 5 7 minutes. Stir and continue to cook until everything is heated through. Remove from the heat and drain green beans in a colander.
