Smoked Pork Shoulder Picnic Roast Recipe

Smoked pork shoulder picnic roast recipe. Remove pork roast from the smoker and tightly wrapped meat with aluminum foil. Mix 8oz of the apple juice pineapple juice and red wine vinegar together in a spray bottle. Rub salt pepper and garlic on the fat.
Place the pork picnic directly on the cooking grate. Place pork roast in the smoker. Place pork roast on a flat surface and gently but thoroughly rub the top and sides with an even coat of mustard.
Score fat lightly in a diamond pattern not piercing through to the meat. Bring your smoker up to 250 for indirect cooking using hickory and cherry wood for smoke. Using a spoon carefully spread the rub across the surface place some rub on your fingers and pat them along the side to ensure even coverage.
Place back in the smoker and cook for 3 hours. Any less and the pork will dry out. Any more and the fat will prevent the rub from seasoning the meat.
Place pork in lasagne pan fat side up. Pour 3 4 cup of water into the bottom of the baking dish. Cover roasting pan with foil and bake in the oven for 1 hour.
Preheat oven to 350f place picnic ham on a large roasting pan or baking dish fat side up. Smoke for 5 hours. Apply a combo of equal parts sweet rub and spicy rub directly on the meat.
