Pour the oat milk and water into a large pan stir in the sweetener and salt then add the pudding rice. Stir to mix well. Once mixture has thickened stir in maple syrup and final cup of oat milk.
Leaving the pan on the hob and cover with a lid. 1 cup arborio rice. Bring to a boil cover and let simmer for 20 minutes stirring every few minutes.
