Recipe Sweet Potato Leek
Of the leek cream.
Recipe sweet potato leek. Add a layer of sweet potato slices season lightly with salt and pepper and spoon on another 2 tbs. Layer half the sweet potato mixture in a buttered baking dish. Spread half of leek mixture on top.
Add the leeks celery and a pinch of salt and cook for 5 minutes until starting to soften. For the filling boil steam or microwave sweet potato until tender. Oil in nonstick skillet over medium high heat.
Fold in the leeks and cheddar until just combined then pour into prepared pan and bake in oven for 20 25 minutes or until puffed and golden. Add the stock and sweet potato and bring to the boil. Cover the skillet and cook for 10 minutes until the potatoes are fork tender.
With your hands or a rubber spatula press down firmly on the potatoes and drizzle the remaining leek cream over them. Add stock lemon zest and juice thyme pepper and remaining 1 2 teaspoon salt. Add the sweet potatoes and simmer covered 10 minutes.
Put the carrots sweet potatoes leeks onion garlic celery stock and bay leaf into a large flameproof casserole and bring slowly to the boil. To make stuffing melt butter in frypan over medium heat. Add leeks garlic and 1 1 2 tbs.
Arrange one third sweet potato slices over bottom of prepared pan overlapping slightly. Saute over medium heat for 10 minutes stirring frequently. Add the sliced leek minced garlic and red pepper flakes if using.
